Under a lime green awning, neatly dressed and hungry patrons linger, awaiting their turn at the cafeteria-style kitchenette. Once inside, a sign cautions to "step back to avoid flying greens" as salad preppers slice, dice and chop everything from crunchy iceberg to marinated tofu. In the narrow concrete-floored space decorated simply with (what else?) huge green leaves painted on the walls, customers can select from 48-ounce seasonal salads or craft their own with options such as avocado, barbecued shrimp, hard-boiled eggs and applewood-smoked bacon. After ordering, diners squeeze into a table in the back, or grab a seat at one of three covered patio tables overlooking Wilshire Boulevard.
